Béchamel Sauce

In a medium size pot, begin to melt 5 Tbsp of butter over a medium heat. At the same time, bring 4 Cups of 3.25% milk to a simmer in a small pot over medium-low heat.
Add ¼ Cup flour to the fully melted butter and whisk constantly until the mixture turns from a light to dark golden colour. This will likely take at least 10 minutes. The milk must be simmering when this colour change occurs, so you may need to adjust its heat while whisking.
When the mixture is dark golden in colour, add the milk to it and whisk frequently until your desired thickness is reached. If you wish to add any herbs, spices, or other ingredients, then they should be added with the milk.
